So, when I moved out of my mum's home almost seven years ago now, I ensured I had a couple of go to recipes to make sure I didn't live off crap. Not only are these meals relatively cheap to make but actually taste good. I've even fed them to other people!
500g of whatever mince you like
However many chillies you want
1 large onion
1 green pepper
1 red pepper
1 tin of sweetcorn
2 cloves of chopped garlic (I love garlic so I use 4)
A large splash of tomato puree
2 tins of chopped tomatoes
1 tin of kidney beans
1 beef stock cube
1 tsp cayenne pepper
1 tsp cumin
Boiled rice
Soured Cream
My own method is simple. I grab all of these ingredients (bar the rice and soured cream) and shove them in a massive casserole dish. I then set my oven to 160° and place the casserole dish inside it. I leave it in there (with checks every 20 minutes) for probably about an hour and a half.
I chose to do it this way as not only is it incredibly easy but... it makes the meat really tender whilst continuing to flavour the tomato sauce. Also, it does make the meal slightly healthier which is a bonus.
You can also fry the chilli ingredients. Starting with heating some oil and frying the onions. You then brown the rice in with the onions. You gradually add in the other vegetables ensuring they are cooked to your taste. You then add in the beef stock, the chopped garlic and the chopped tomatoes. Stir it around for about 5 minutes before adding in the spices. Finally add in the tomato puree to thicken the chilli. Then let simmer.
Obviously boil the rice.
